Tuscany Tuesday


I have decided to make Tuesday evening my night to make all Mediterranean Meal day.

This way I will learn to incorporate this style of eating into our every day lives.

Last night I made pork that was marinded in Red Wine, Coriander, and Cinnamon, sauted with onion.  White Bread with olive oil and spices for dipping, and a pasta salad made with multi colored pasta, olives, yellow pepper, tomatoes, green onion and olive oil with some basil and oregano. 


It was a light, delicious side to have with the savory pork.



The Pork was super easy...I got the recipe out of The New Mediterranean Diet Cookbook...


I made Afelia...which is a Braised Pork with Wine, Cinnamon, and Coriander.  You are supposed to marindate this over night but I could only do it for 1 hour whiched seemed to be enough.



1. Marindae the pork in Red Wine, Cinnamon, Coriander. (over night)
2.  Add pork to HOT skillet, with EVOO to braise.  Add sliced onion and cook until clear.
3.  Cover the skillet and put into a 300 degree oven to finish cooking the pork.
4.  Serve with Oven Roasted Potatoes, Red wine, or rice.

I don't have a good after picture except this one....Everyone raved about the pork, it dissapeared pretty quickly.
