Tonight is Tuscany Tuesday!
As I write, this is slow cooking at home...chicken thighs, olive oil, a ton of Tarragon, lemon juice and sliced lemon....this is for tomorrow or just to have on hand in case of a dinner emergency...Rule NO. 1 of eating healthy is to be Prepared! I am always one step ahead of myself with a meal ready to go when I am not in the mood to deal.
Mixture of bell peppers and spinach leaves sauted in olive oil, red wine, garlic.
I made a Lentil Soup last night which smelled absolutely delicious, and I make a large crunchy green salad to go with it. *****Maybe I will stop by the bakery on the way home and pick up some fresh bread...oh yes!!! Whole Wheat, chewy, delicious bread! I will post pics tomorrow of that wonderful, HEALTHY meal.
By the way, my husband has lost 21 lbs since starting the Mediterranean diet...I got on the scale today and have lost 6!

JUST FOR FUN!
Just for fun I thought I would post this real quick....a good way to stay feminine and warm is to use leggins under your skirts or dress, pair it was a jacket, scarf, and boots or flats.
This dress I got on eBay for a steal...leggings from Walmart, shoes from Payless were 5$...the jean jacket is from the Dress Barn - 2006...was about 40$...but worth every penny because it still looks like new and is 4 years old. Plus I wear it all year round. It was a good investment.
