It's still Soup Weather!


Mediterranean White Bean Soup

Hi Dolls,

Our Mediterranean diet continues.  Jeff has lost 15 lbs and I have lost 5!  So today I thought I would share an easy recipe with you.  This soup is very easy to make.  You can use vege broth if you are a vegan.  I used Chicken broth and always use EVOO to saute the onions and garlic.  YUMMY!

It's still Soup Weather!

4 cups vegetable broth

1 medium potato, peeled and diced small
1 large carrot, peeled and diced small
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
4 cups cooked cannellini beans or 2 (14 ounce) cans canned cannellini, drained and rinsed
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary
salt & freshly ground black pepper
1 teaspoon lemon juice


****This is Really good with sour dough bread...toasted with butter.
