Day 11 - of the 40 Day Fast

Hi Dolls,

I am on day 11 into my fast and have not had a piece of cake, cookie, or pie..it's amazing! OR Pizza more importantly - I made it through the weekend without pizza! It was harder than usual because it was a difficult time...I mean a difficult... "time of the month" if you get what I mean...and the cravings hit hard! But I turned to GOD for help and honestly...the Dark Chocolate and protein snacks I prepared a head of time helped a lot as well! ....like chicken thighs roasted and deviled eggs. With God and Prior Proper Planning...I made it through.


So....I felt very proud of myself and so I got on the scale today...and guess what - up 4 lbs from last Thursday??????

ANYWAY, I will not give up. I am feeling better and my cravings for sugar are gone!

I got this low fat, low sugar recipe for Baked Apples off the French Women Don't Get Fat Website... I am going to make it soon and post a pic later this week.


I did make a Baked Apple and Plum Tart (doughless) w/Almonds and Walnuts last week, and last night I rolled it up in pre-made croissant dough..it was delicious...I forgot to take a pic of the final product, and honestly the boys ate them so fast...but here is a pic of what it looked like before I baked it. I then wrapped this filling into the pre-made dough, baked for 15 min at 350 and TAADAHHHH....a quick and tasty way to eat healthy. We had this with roasted chicken. It was perfect.


Apple Tart without Dough - Mireille Guiliano's recipe!

The following recipe for an apple tart without a crust is less sweet - lower in calories - but more nutritional than what one finds in pastry shops, deli's, or supermarkets. Homemade versus prepared food: a universe of difference. Read labels and start avoiding foods whose ingredients sound like chemical weapons.

You don't need to eat the cabbage leaves, though you can; they are for presentation and don't affect the tart.
INGREDIENTS
4 medium-size Golden Delicious apples
2 tablespoons lemon juice
4 cabbage leaves
1 tablespoon sugar
1/4 teaspoon cinnamon
Dots of butter (1/8th teaspoon)

Yield: 4 Servings
RECIPE
Peel and core the apples, cut into quarters, slice each quarter into thirds, and sprinkle with the lemon juice. Place the apples on the cabbage leaves, shaping the slices like those on a small tart.

Preheat the oven to 275 degrees. Mix the sugar with the cinnamon and sprinkle almost all of it on the apple slices (leaving enough to cover the dots of butter). Add small dots of butter and cover with the remaining sugar-cinnamon mixture. Bake the tart in the preheated oven for 15 minutes. Serve warm or at room temperature.
